In Campania, the vines that produce the grapes for this wine grow on soils of clay and volcanic rock. After the manual harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. After the completion of fermentation, Pallagrello Bianco Verginiano can continue to harmonize for several months on the fine lees.
