Vinification of Il Verro Pallagrello Nero
This wine clearly focuses on one grape variety, and that is Pallagrello Nero. Only impeccable grapes were used for this wonderfully balanced varietal wine from Il Verro. The grapes grow in optimal conditions in Campania. The vines here dig their roots deep into soils of clay. The grapes for this red wine from Italy, when perfectly ripe, are harvested exclusively by hand. After the grapes are harvested, they are quickly taken to the winery. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After the end of fermentation, Pallagrello Nero can continue to harmonize for a few months on the fine lees.

This Italian red wine is best enjoyed at a temperature of 15 - 18°C. It is perfect as an accompaniment to boeuf bourguignon, roasted calf's liver with apples, onions and balsamic vinegar sauce or braised chicken in red wine.
