Vinification of Passio Falanghina from La Sibilla
The basis for the powerful Passio Falanghina from Campania are grapes from the grape variety Falanghina. The grapes grow in optimal conditions in Campania. The vines here dig their roots deep into soils of sand and volcanic rock. After the grape harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. Once fermentation is complete, Passio Falanghina can continue to harmonize on the fine lees for a few months.
Recommendation for La Sibilla Passio Falanghina
This Italian is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompanying wine to yogurt mousse with poppy seeds, coconut-kefir cream or baked apples with yogurt sauce.
