Vinification of the Domaine de Chevalier Pessac-Léognan Blanc
The basis for the balanced Pessac-Léognan Blanc from Bordeaux are grapes from the Sauvignon Blanc and Semillon varieties. In Bordeaux, the vines that produce the grapes for this wine grow on soils of clay and gravel. Of course, Pessac-Léognan Blanc is also defined by more than just the Pessac-Léognan soil. This French wine can be described in the best sense of the word as an Old World wine that is exceptionally impressive. The grapes for this white wine from France are harvested, at the time of optimal ripeness, exclusively by hand. After the harvest, the grapes arrive at the winery by the fastest route. Here they are sorted and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. Fermentation is followed by aging for 18 months in oak barrels.
