Vinification of Komjanc Simon Pinot Grigio Collio
This wine clearly focuses on one grape variety, namely Pinot Grigio. Only impeccable grape material was used for this wonderfully balanced varietal wine from Komjanc Simon. The grapes grow in optimal conditions in Friuli Venezia Giulia. The vines here dig their roots deep into soils of clay and sandstone. After the hand harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.
