The Pinot Noir from Palliser Estate of New Zealand's South Island offers a dense, light red color in the wine glass. In the glass, this red wine from Palliser Estate offers aromas of plums, complemented by black cherry and cloves. On the palate, Palliser Estate's Pinot Noir opens pleasantly dry, grippy and aromatic. On the palate, the texture of this punchy red wine is wonderfully silky and dense. Due to its present fruit acidity, the Pinot Noir is wonderfully fresh and lively on the palate. In the finish, this well storable wine from the wine-growing region of New Zealand South Island finally inspires with exceptional length. There are again hints of plum. In the aftertaste, mineral notes of the gravel and clay dominated soils are added.

Vinification of the Palliser Estate Pinot Noir

This red wine clearly focuses on one grape variety, Pinot Noir. Only the best grapes were harvested for this wonderfully powerful varietal wine from Palliser Estate. On New Zealand's South Island, the vines that produce the grapes for this wine grow on soils of clay and gravel. At the time of optimal ripeness, the grapes for the Pinot Noir are harvested exclusively by hand without the use of punishing and less selective grape harvesters. After the grape harvest, the grapes are taken to the press house by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in small wood at controlled temperatures. At the end of fermentation, the powerful Pinot Noir is aged for several months in French oak barrels.

Enjoy this red wine from New Zealand ideally tempered at 15 - 18°C as an accompanying wine to veal boiled beef with beans and tomatoes, roasted calf's liver with apples, onions and balsamic vinegar sauce or braised chicken in red wine.
