Vinification of the Pouilly Fumé by Guy Saget
The basis for the elegant Pouilly Fumé from the Val de Loire are grapes from the grape variety Sauvignon Blanc. Pouilly Fumé is an Old World wine through and through, as this Frenchman breathes an extraordinary European charm that clearly underscores the success of Old World wines. After the harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. Vinification is followed by aging for several months on the fine lees before the wine is finally drawn off.
Food recommendation for the Pouilly Fumé by Guy Saget
This white wine from France is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to roast trout with ginger pear, asparagus salad with quinoa or wok vegetables with fish.
