In the glass, the Pouilly Fumé from the pen of Pascal Jolivet presents a bright pale yellow color. When swirling the glass, one can perceive a first-class balance in this white wine, as it does not stand out watery or syrupy or liqueur-like on the walls of the glass. The aroma of this white wine from the Val de Loire is determined by hints of various red and black berries and dark fruits such as black cherries and plums. The Pascal Jolivet Pouilly Fumé presents itself to the wine lover wonderfully dry. This white wine never appears coarse or meager, but round and smooth. Balanced and multifaceted, this silky white wine presents itself on the palate. Due to the moderate fruit acidity, the Pouilly Fumé flatters with a soft palate feeling, without lacking freshness at the same time. The final of this youthful white wine from the wine-growing region of the Val de Loire, more precisely from Sancerre, finally thrills with considerable reverberation. The finish is also accompanied by mineral notes of the soils dominated by flint and limestone.

Vinification of the Pascal Jolivet Pouilly Fumé

This balanced white wine from France is made from the Sauvignon Blanc grape variety. In the Val de Loire, the vines that produce the grapes for this wine grow on soils of flint and limestone. At the time of optimal ripeness, the grapes for Pouilly Fumé are harvested exclusively by hand without the help of coarse and less selective full harvesters. After harvesting, the grapes are immediately taken to the press house. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally bottled.

Food recommendation for the Pascal Jolivet Pouilly Fumé

This French white wine is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to omelet with salmon and fennel, coconut-lime fish curry or vegetable salad with beetroot.
