The top wine Quercus from Quinta de Quercus is only vinified from the Tempranillo grape in particularly good vintages by the two winemakers Sam Harrop and Tomás Buendìa.
In the glass, this wine impresses with a deep dark ruby red. The multi-layered bouquet treats the nose to the aromas typical of the grape variety: juicy cherry, meets fresh strawberries and juicy plum. Underpinning the red fruit richness are fresh herbs - such as thyme and rosemary - and licorice. On the palate, this Spanish red wine is full-bodied with a velvety smooth texture. The well-structured body harmonizes perfectly with the balanced tannins. The finish awaits with wonderful, expressive length and berry nuances.
Vinification of the Quercus red wine
The Tempranillo grapes for this red wine come from 30-year-old vines in the single vineyard sites Viña Ocaña and Camino La Morras. Winemakers Sam Harrop and Tomás Buendìa follow a clear philosophy of making terroir-driven site wines from native Spanish grape varieties with depth, elegance, complexity and aging potential.
The carefully hand-picked and selected grapes from the two single vineyard sites are gently pressed. The resulting must is fermented in stainless steel tanks under temperature control. Wood aging of this wine takes place for a total of 12 months in American and French oak barriques. Only then is this wine bottled.
Depending on the vintage and the course of the harvest, this wine is "recreated" to make the most of the high potential from the Tempranillo grapes of the two sites.
