Vinification of the Caruso & Minini Quietum Appassimento Primitivo
The powerful Quietum Appassimento Primitivo from Italy is a single-varietal wine made from the Primitivo grape variety. After harvesting, the grapes are transported to the winery as quickly as possible. Here they are sorted and carefully crushed. Fermentation then takes place in small oak barrels at controlled temperatures. Vinification is followed by maturation on the fine lees for several months before the wine is finally drawn off.
