Vinification of Racìna Salina Bianco by Salvatore D'Amico
This balanced white wine from Italy is organically vinified from the grape varieties Malvasia delle Lipari and Catarratto. The grapes grow in optimal conditions in Sicily. Here, the vines dig their roots deep into soils of sand and volcanic rock. After harvesting, the grapes reach the press house by the fastest route. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks and large wood at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally drawn into bottles.
