Rare Rose Champagne is an Old World wine in the best sense of the word, as this Frenchman breathes an extraordinary European charm that clearly underscores the success of Old World wines. Once perfect physiological ripeness is assured, the grapes for Rare Rose Champagne are harvested exclusively by hand without the aid of crude and less selective machinery. Following the harvest, the grapes are immediately taken to the winery. Here they are sorted and gently broken up. The fermentation of the base wines follows. After the assemblage of the cuvée, further aging follows on the basis of the Méthode Traditionelle. Subsequently, the Champagnes Piper-Heidsieck Rare Rose Champagne matures for several months in the bottle and is finally disgorged.
