After the first swirl, this Fortified Wine reveals a high density and richness, which shows in church windows at the edge of the glass. This single varietal Spanish wine flatters the glass with wonderfully expressive notes of prunes, quince, dried fruit and fruit breads. These are joined by hints of cigar box, toasted barrique and oak.
The Osborne Rare Sherry Solera Pedro Ximenez Viejo presents us with an incredibly fruity taste on the palate, which is of course due to its residual sweetness flavor profile. Pressurized and complex, this velvety sherry presents itself on the palate. Due to its balanced fruit acidity, the Rare Sherry Solera Pedro Ximenez Viejo flatters with a pleasing mouthfeel, without lacking in juicy liveliness. In the finish, this excellent storable from the wine-growing region of Andalusia finally inspires with considerable length. There are again hints of apple and quince.
Vinification of the Osborne Rare Sherry Solera Pedro Ximenez Viejo
This sherry clearly focuses on one grape variety, Pedro Ximénez. Only first-class grape material was brought in for this exceptionally powerful single-varietal wine from Osborne. Without question, the Rare Sherry Solera Pedro Ximenez Viejo is also determined by the climate and viticultural style Jerez DO. This Spaniard can be described as an Old World wine in the truest sense of the word, with an exceptionally impressive presentation. The fact that the Pedro Ximénez grapes thrive under the influence of a warm climate also has an influence on the ripening of the grapes that cannot be dismissed. This manifests itself, among other things, in particularly well ripened grapes and rather high alcohol content in the wine.
