Vinification of Cave Mont Blanc Rayon
The basis for the balanced Rayon from Valle d'Aosta are grapes from the Prié variety. The grapes for this white wine from Italy, when perfectly ripe, are harvested exclusively by hand. After harvesting, the grapes immediately reach the winery. Here they are selected and carefully broken up. This is followed by fermentation in the bottle at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally bottled.

This white wine from Italy is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to pumpkin casserole, leek soup or chickpea curry.
