The Mouton Cadet Réserve Sauternes AOC by Baron Philippe de Rothschild shines bright golden in the glass. The complex bouquet opens in a mix of white and yellow fruits like peach, apricots, mirabelle and quince, as well as fresh, gentle notes of aniseed and bergamot with a touch of honey and orange zest in the background. On the palate, this typical and elegant Sauternes is lushly aromatic, gentle, juicy, powerful and rich, body and sweetness are superbly balanced. In the long finish, sweet aromas of yellow fruit appear, with nuances of apricots and caramel, with a pleasant freshness in the aftertaste.
Vinification of the Mouton Cadet Réserve Sauternes by Baron Philippe de Rothschild
The grapes for this sweet wine grow in the region of Sauternes at the confluence of the small river Ciron in the warmer Garonne. In the autumn, fog and humidity favor the formation of the botrytis cinerea, which causes the grapes to shrink and concentrate on sugar, acidity and other ingredients.
For this Réserve Sauternes from the Mouton Cadet wine line, 91% Semillon, 6% Sauvignon Blanc and 3% Muscadelle grapes are vinified. They are harvested by hand, then gently pressed and then left on the mash for an extended period of time. The alcoholic fermentation takes place over several days. The fermentation process is stopped before the whole sugar has converted into alcohol. This gives the wine its sweetness and its unique taste.
The Mouton Cadet Réserve Sauternes is a successful example of a first-class Sauternes with an excellent price-performance.
