Vinification of the Van Volxem Riesling Old Vines from Winery Van Volxem
The elegant Van Volxem Riesling Alte Reben from Germany is a single varietal wine, vinified from the Riesling grape variety. In the Saar, the vines that produce the grapes for this wine grow on soils of slate. Moreover, the grapes of this white wine from Weingut Van Volxem do not grow in the flat land, but dig their roots into the subsoil in steep slopes. The steep slope cultivation ensures that even in cooler regions with shorter growing seasons, the vines receive a maximum of sun. At the time of optimal ripeness, the grapes for Van Volxem Riesling Alte Reben are harvested exclusively by hand without the aid of coarse and less selective machinery. After the harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully broken up. Fermentation follows in large wood at controlled temperatures. After the end of fermentation, the Van Volxem Riesling Alte Reben is aged for several months in oak barrels.
