Vinification of the Riesling from F.E. Trimbach
The basis for the balanced Riesling from Alsace are grapes from the Riesling grape variety. The grapes grow under optimal conditions in Alsace. Here, the vines dig their roots deep into soils of limestone, sandstone and marl. When the perfect physiological ripeness is ensured, the grapes for the Riesling are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the hand harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally bottled.
