Vinification of the Zenato Ripassa Valpolicella Ripasso Superiore Jeroboam
The powerful Ripassa Valpolicella Ripasso Superiore Jeroboam from Veneto is made from grapes from the Corvina, Oseleta and Rondinella varieties. After the grape harvest, the grapes are quickly transported to the winery. Here they are sorted and carefully crushed. Fermentation then takes place in small wooden vats at controlled temperatures. Once fermentation is complete, the Ripassa Valpolicella Ripasso Superiore Jeroboam is aged for 24 months in Slavonian oak barrels.
