Vinification of the Casello Bondoni Rosaspina
The basis for the balanced Rosaspina from Lombardy are grapes from the Groppello, Marzemino and Sangiovese grape varieties. After being harvested by hand, the grapes are quickly transported to the winery. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Once it has finished, the Rosaspina can continue to harmonize on the fine lees for a few months.
