The balanced Rosat from Spain is a cuvée, vinified from the grape varieties Callet and Manto Negro. Obviously, the Rosat is also determined by more than just the soil Mallorca VT. This Spaniard can be called an Old World wine in the best sense of the word, exceptionally impressive. When perfectly ripe, the grapes for Rosat are harvested exclusively by hand without the help of coarse and barely selective machines. After the harvest, the grapes are immediately sent to the winery. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. Once fermentation is complete, the Rosat can continue to harmonize on the fine lees for a few months.
