Fattoria della Talosa vinifies 85% Sangiovese and some Merlot from the younger vineyards for this tasty red wine from Tuscany, while the Canaiolo comes from 30-35 year old vines. The proportion of Merlot and Canaiolo is a maximum of 15%. After fermentation and malolactic fermentation in stainless steel tanks, the wine is aged for 6 to 8 months, partly in stainless steel and partly in large wooden barrels and tonneaux that have already been used once or twice.
