Vinification of the Rotschiefer Riesling Kabinett from Van Volxem
This wine clearly focuses on one grape variety, and that is Riesling. Only immaculate grapes were used for this exceptionally elegant varietal wine from Van Volxem. The grapes grow under optimal conditions in the Saar. The vines here dig their roots deep into soils of slate. Moreover, the grapes of this top Van Volxem wine do not grow in the lowlands, but dig their roots into the subsoil in steep slopes. The steep slope cultivation ensures that even in less sunny regions with shorter growing seasons, the vines receive a maximum of sun. At the time of optimal ripeness, the grapes for the Rotschiefer Riesling Kabinett are harvested exclusively by hand without the help of coarse and less selective full harvesters. After the hand harvest, the grapes reach the winery by the fastest route. Here they are sorted and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. Vinification is followed by aging on the fine lees for several months before the wine is finally bottled.
