The Peter Mertes Rotwild Silvaner presents itself to the wine lover wonderfully dry. This white wine never shows itself coarse or meager, as one might expect from a wine beyond the 4-euro mark. On the tongue, this light-footed white wine is characterized by an incredibly light texture. Due to the balanced fruit acid, the Rotwild Silvaner flatters the palate with a soft feel, without lacking freshness at the same time. In the finish, this wine from the wine-growing region of Rheinhessen finally inspires with beautiful length. Hints of apple and quince are again apparent.
Vinification of the Rotwild Silvaner by Peter Mertes
This white wine clearly focuses on one grape variety, and that is Silvaner. Only immaculate grape material was used for this wonderfully elegant varietal wine from Peter Mertes. After the hand harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Rotwild Silvaner can continue to harmonize on the fine lees for a few months. After the wine is finished, the Rotwild Silvaner is carefully harmonized.
Food recommendation for the Peter Mertes Rotwild Silvaner
This white wine from Germany is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompaniment to coconut-lime fish curry, omelet with salmon and fennel or wok vegetables with fish.
