The Saffredi Toscana IGT from Fattoria Le Pupille appears a rich, deep ruby red with violet reflections in the glass. The multi-faceted bouquet reveals noble vegetal aromas of sandalwood and tobacco, mineral hints of graphite, nuances of dark berries and notes of licorice, pepper and forest floor. This wonderful terroir wine is intense on the palate, with a solid, structured taste, dense texture with fine, elegant tannins, carried by plenty of freshness, presence and fullness. The finish is persistently juicy and very long. A successful masterpiece.

Vinification of the Saffredi Toscana Rosso IGT from Fattoria Le Pupille

The Saffredi has been produced since 1987 and is an iconic wine for Fattoria Le Pupille. The wine is dedicated to Fredi, Elisabetta Geppetti's mentor, who inspired her passion for wine. Luca D'Attoma has been the oenologist at Fattoria Le Pupille since 2011.

For the Saffredi, 55% Cabernet Sauvignon, 30% Merlot and 15% Petit Verdot grapes were vinified. The grapes thrive in the vineyard of the same name, located at an altitude of 252 meters, facing west towards the Thyrrenian Sea, on soils with a predominance of sandstone, little organic matter and a low proportion of clay marl. Since 2012, the cuvée has been complemented by Petit Verdot, a grape variety that matures later than Cabernet Sauvignon and contributes to the richness of flavor and longevity of this Supertuscan.
The grapes are harvested between mid-September for the Merlot, late September and early October for the Cabernet Sauvignon and late October for the Petit Verdot, depending on the ripeness of the grapes. After maceration for 25 days at a controlled temperature, the wine is aged for 18 months in French oak barriques, 75% new, 25% used, followed by a further 18 months in the bottle.
