Vinification of the Saint-Émilion Grand Cru from Chateau La Chapelle aux Moines

The basis for the balanced Saint-Émilion Grand Cru from France are grapes from the grape varieties Cabernet Franc, Cabernet Sauvignon and Merlot. The grapes grow under optimal conditions in Bordeaux. The vines here dig their roots deep into soils of sand and limestone. Clearly, the Saint-Emilion Grand Cru is also determined by more than just the soil Saint-Emilion. This Frenchman can be described as an Old World wine in the best sense of the word, and it is exceptionally impressive. When perfect physiological ripeness is assured, the grapes for Saint-Emilion Grand Cru are harvested exclusively by hand without the use of crude and barely selective machinery. After the hand harvest, the grapes arrive at the winery by the fastest route. Here they are sorted and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. After the end of fermentation, the elegant Saint-Émilion Grand Cru is aged for another 12 months in French oak barriques.
