In Rhône Valley, the vines that produce the grapes for this wine grow on soils of granite and gravel. Due to the mitigating influence of the nearbyRiver, the grapes ripen more slowly and more aromatic partiality. After the grape harvest, the grapes are immediately sent to the winery. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks and small wood at controlled temperatures. Once fermentation is complete, the Saint Esprit Côtes du Rhône can continue to harmonize on the fine lees for a few months....
