Vinification of the Salcheto Salco Vino Nobile di Montepulciano
Only Prugnolo Gentile - also known as Sangiovese - from vineyards in Montepulciano is used for this Italian red wine. The grapes are very carefully harvested by hand and immediately taken to the Salcheto wine cellar. There, the grapes are strictly selected, gently pressed and fermented in stainless steel tanks.
After the fermentation process is complete, 70% of this wine matures for 24 months in botte (large wooden barrels) and 30% in tonneaux. Before this red wine leaves the Salcheto winery, the Salco Vino Nobile di Montepulciano rounds off harmoniously in the bottle for another 36 months.
