Vinification of the San Cyrill Passito from Villscheider
The elegant San Cyrill Passito from Italy is a single-varietal wine, pressed from the Kerner grape variety. In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on soils of limestone. After the grape harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully crushed. Then fermentation takes place in large wood at controlled temperatures. After the completion of fermentation, the light-footed San Cyrill Passito is aged for another 24 months in oak barrels.
