In the glass, the Sauvage Sancerre Blanc from the house of Pascal Jolivet presents a bright pale yellow color. When swirling the glass, one can perceive a perfect balance in this white wine, as it does not stand out on the walls of the glass neither watery nor syrupy or liqueur-like. The first nose of Sauvage Sancerre Blanc presents nuances of apples, limes and lemongrass. The fruity aspects of the bouquet are joined by more fruity-balsamic nuances.

On the palate, Pascal Jolivet's Sauvage Sancerre Blanc opens pleasantly aromatic, fruit-driven and balanced. On the finish, this youthful from the wine-growing region of the Val de Loire finally thrills with good length. Again, hints of grapefruit and lemongrass appear. In the aftertaste, mineral notes of the soils dominated by silicate rock and limestone are added.

Vinification of the Sauvage Sancerre Blanc from Pascal Jolivet

The balanced Sauvage Sancerre Blanc from France is a single-varietal wine, pressed from the Sauvignon Blanc grape variety. The grapes grow in optimal conditions in the Val de Loire. The vines here dig their roots deep into soils of limestone, silicate rock and marl. Sauvage Sancerre Blanc is an Old World wine in the best sense of the word, as this Frenchman exudes an extraordinary European charm that clearly underscores the success of Old World wines. At the time of optimal ripeness, the grapes for Sauvage Sancerre Blanc are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the harvest, the grapes are immediately transferred to the press house. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. After the end of fermentation, the Sauvage Sancerre Blanc can continue to harmonize on the fine lees for a few months....
