The Classique Sauvignon blanc of Domaine Paul Mas from Languedoc presents a brilliant pale yellow color in the wine glass. This wine also shows greenish yellow reflections in the center. The first nose of Classique Sauvignon blanc IGP flatters with of pomelo, papayas and pink grapefruit. The fruity components of the bouquet are joined by beech smoke, air-dried ham and brown bread.

This wine delights with its elegantly dry flavor. It was bottled with only 3 grams of residual sugar. As you would naturally expect from a wine beyond the 5 euro mark, this Frenchman naturally enraptures with the finest balance for all its dryness. Taste does not necessarily need a lot of residual sugar. On the palate, the texture of this fleet-footed white wine is wonderfully light and crisp. Due to the moderate fruit acidity, the Classique Sauvignon blanc IGP flatters with velvety palate feeling, without lacking juicy liveliness. The final of this white wine from the wine-growing region of the Languedoc finally thrilled with good reverberation.

Vinification of the Domaine Paul Mas Classique Sauvignon blanc

This white wine clearly focuses on one grape variety, namely Sauvignon Blanc. For this exceptionally elegant single-varietal wine from Domaine Paul Mas, only first-class grapes were used. In Languedoc, the vines that produce the grapes for this wine grow on soils of sedimentary and weathered rock. Of course, Classique Sauvignon blanc IGP is also defined by more than just the Pézenas soil. This Frenchman can be described as an Old World wine in the best sense of the word, with an exceptionally impressive presentation. When perfectly ripe, the grapes for Classique Sauvignon blanc IGP are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the hand harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Then fermentation takes place in controlled temperatures. The fermentation is followed by maturation.

Enjoy this white wine from France ideally well chilled at 8 - 10°C as an accompaniment to cod with cucumber-mustard vegetables, spaghetti with caper-tomato sauce or omelet with salmon and fennel.
