Vinification for the Sauvignon Blanc Terroir Littoral from Fortant de France
Before fermentation takes place, the grapes receive a special treatment: they are carefully destemmed, macerated on the berry skins for 6 hours, and the must is then stored in a cool place on the lees for 3 days to fully exploit the aromatic potential of the grapes.
Subsequently, the grapes of the single vineyards are vinified separately to preserve their typical character. The fermentation processes all take place at low temperatures to prevent the loss of aromatic substances and to preserve the freshness of this wine. The wine is then aged on the lees for 3 months and carefully stirred. After tasting the base wines, this varietal cuvée is then blended.
