Sauvignon Blanc Verdejo DO - Dominio de Fontana

The Sauvignon Blanc & Verdejo is a Vino de Finca, an estate bottling of Dominio de Fontana, one of the Cantarero Morales family wineries in the D.O. Ucles, in the north of the Spanish wine region of Castilla-La Mancha.

This Spanish white wine presents itself in the glass with a bright green-yellow color, the bouquet tickles the nose with a multifaceted aromatic play in which sauvignon typical notes of grass and gooseberry can be found, as well as hints of white pepper and a touch of fennel, typical primary aromas of the Verdejo grape. On the palate, this fresh wine is full-bodied with good texture, medium-long finish, persistent with mineral notes.

Vinification of the Sauvignon Blanc Dominio de Fontana

The grapes for Dominio de Fontana wines are selectively produced from very specific plots. In this white wine cuvée of 80% Sauvignon and 20% Verdejo, they come from the La Ensancha and El Pozo sites. The vines are young with 8 years, the soils are calcareous and clayey. Fermentation takes place in steel tanks, then the wine remains on the fine lees for about 3 months before being bottled.
