There are again hints of mirabelle and lime. In the aftertaste, mineral notes of the soils dominated by silicate rock and slate join in.
Vinification of the Van Volxem Schiefer Riesling
The basis for the elegant Schiefer Riesling from Saar are grapes from the Riesling grape variety. The grapes grow under optimal conditions in the Saar. The vines here dig their roots deep into soils of slate and silicate rock. The grapes for this white wine from Germany are harvested, at the time of optimal ripeness, exclusively by hand . After harvesting, the grapes are immediately transferred to the press house. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Schiefer Riesling is allowed to further harmonize on the fine lees for a few months.
