Vinification for the Pinot Grigio by Elena Walch
The vineyards are located in Tramin and Caldaro, these areas are characterized by their mild climate and, on the south side of the Alps, very Mediterranean climate. About 1800 hours of sunshine every year and maximum temperatures of up to 30°C offer the perfect conditions for winegrowing.
Immediately after the harvest, the grapes are gently pressed, then the fresh must is clarified at low temperatures and fermented in the steel tank. The young wine matures for several months in the steel tank on the fine yeast.
