Seven Flags Pinot Noir 2017 - Paul Cluver
The Seven Flags Pinot Noir by Paul Cluver is a truly outstanding wine from this cool region of South Africa. It presents itself full-bodied, firm and spicy as well as particularly complex. On the nose, black cherry and vanilla with a little chocolate. The palate is filled similarly to a Burgundy wine, with plenty of dense, mature and soft tannin. A wine with an impressive character and a lot of enamel that goes well with game dishes, mushrooms, trout with Beurre rouge and veal chop!

Vinification for the Seven Flags Pinot Noir
Hand-picked grape material. 6 days of cold maceration. First the fermentation starts spontaneously, then the addition of special Burgundian yeasts. The cap is pumped over 3-4 times a day. Ageing for 11 months in oak barrels (20% new) together with the yeast. Only the best Pinot Noir barrels are used for the Seven Flags.
