Vinification of the Siete Pecados Godello D.O. Monterrei of Pazo do Mar
The balanced Siete Pecados Godello D.O. Monterrei from Spain is a single varietal wine, vinified from the Godello grape variety. The grapes grow in optimal conditions in Galicia. The vines here dig their roots deep into soils of shale. After the manual harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. After the end of fermentation, the Siete Pecados Godello D.O.. Monterrei can continue to harmonize for a few months on the fine lees.
