The basis for the powerful Sileno Cannonau di Sardegna from Sardinia is grapes from the Cannonau grape variety. In Sardinia, the vines that produce the grapes for this wine grow on limestone soils. After being harvested by hand, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Once it has finished, the Sileno Cannonau di Sardegna can continue to harmonize on the fine lees for several months.
