The balanced Sistina Pecorino Terre di Chieti from Abruzzo is based on grapes from the Pecorino grape variety. The berries for this white wine from Italy are harvested exclusively by hand when they are perfectly ripe. After the grape harvest the grapes reach the press house as quickly as possible. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of the fermentation process, the Sistina Pecorino Terre di Chieti is allowed to harmonise on the fine yeast for a few months.
