Vinification of the Soave DOC from Latium Morini
This white wine cuvée is made from the Garganega and Trebbiano di Soave grape varieties, also known as Verdicchio Bianco. The vines for this wine are rooted in limestone-clay soils in the Mezzane di Sotto region.
The grapes are destemmed and pressed immediately, followed by static clarification with the help of enzymes at low temperatures. The subsequent fermentation takes place for 15 days at 15 - 16°Celsius.
