Sofia Bobal from Bodega De Moya in the Valencia region of Spain is a fascinating wine made from the Spanish grape variety Bobal in combination with Cabernet Sauvignon. This red wine is a tribute to his wife Sofia.
It shows a dense, deep dark ruby color in the glass. This excellent red wine cuvée comes up with a rich bouquet. The nose is dominated by notes of spices and aromas of ripe fruit with mineral and smoky hints. On the palate, this Spanish red wine is full-bodied, velvety and decidedly juicy. Flavors of ripe fruit, nicely integrated with soft tannins, slight hints of menthol that give it a certain freshness. Long lasting, soft finish.
Vinification of the Sofia Bobal De Moya
De Moya Sofia Bobal is vinified as a blend of 93% Bobal and 7% Cabernet Sauvignon, grown and cared for according to organic guidelines. The vineyards are located at an altitude of 850 meters, the vines are 70 to 90 years old. They grow on poor loamy and sandy soils with many pebbles.
The grapes are harvested selectively in 15 kg boxes. After harvesting, the grapes are cooled down to 4 degrees Celsius for 24 hours. Temperature-controlled maceration takes place exclusively in wooden steel tanks, the cap of the must is gently punched down manually during the fermentation, which lasts from 26 to 34 days, exclusively from unpressed grapes, a traditional Spanish method for the production of high quality, complex wines. Aging then takes place for 18 months in selected new, small French barriques.

An impressive, dense Spanish wine that also excites when enjoyed as a solo effort. This dry red wine is excellent with opulent roasts with strong sauces, meat stews, game dishes from furred game to feathered game but also with classic Spanish ham and cold cuts.
