Vinification of the Martin Schwarz Pinot Noir & Portugieser
The starting point for the first-class and wonderfully balanced Cuvée Pinot Noir & Portugieser from Martin Schwarz are Blauer Portugieser and Pinot Noir grapes. The grapes grow under optimal conditions in Saxony. Here, the vines dig their roots deep into soils of clay, loess and volcanic rock. What is unusual about the production of this red wine by Martin Schwarz is the fact that the grapes grow on stone terraces in Saxony. This traditional way of vineyard management is unfortunately very costly and therefore rarely found. The grapes for this red wine from Germany, after ensuring optimal ripeness, are harvested exclusively by hand. After the grapes are harvested, they are immediately taken to the press house. Here they are selected and carefully ground. Fermentation follows in large wood at controlled temperatures. Fermentation is followed by aging for several months in oak barrels.

This German wine is best enjoyed tempered at 15 - 18°C. It is perfect as an accompanying wine to vegetable couscous with beef meatballs, lemon chili chicken with bulgur or ossobuco.
