Vinification of the Cabernet Sauvignon Stellenbosch by Neil Ellis

This red wine clearly focuses on one grape variety, Cabernet Sauvignon. For this exceptionally powerful varietal wine from Neil Ellis, only first-class grapes were used. After harvesting, the grapes are taken to the press house as quickly as possible. Here they are selected and carefully broken up. This is followed by fermentation in small wood at controlled temperatures. After the end of fermentation, the Cabernet Sauvignon Stellenbosch is aged for another 18 months in French oak barrels.
