Cabernet Sauvignon Stellenbosch 2018 - Neil Ellis
The Cabernet Sauvignon from Neil Ellis is a pure, wonderful and multi-faceted red wine from the South African wine-growing region of Stellenbosch.
In the glass this wine has a beautiful cherry red with purple highlights. In the nose a wonderfully fruity aroma unfolds - especially currants, blackberries and plums come to the fore - accompanied by fine hints of pepper and mint. The strong, opulent, ripe but at the same time young palate unfolds a plum-like fruit, underpinned by notes of new oak and delicate tannins. The finish has a beautiful length and a subtle oak spice.
Vinification of Neil Ellis Stellenbosch Cabernet Sauvignon
The Cabernet Sauvignon grapes are immediately brought to the Neil Ellis cellar after harvesting. Once there, the mash is fermented in stainless steel tanks. The fine spice, woody nuances and strong colour are provided by the ageing for 18 months in French oak barrels - 35% of which are new wood.
