Vinification of Villscheider Sylvaner Eisacktal

The basis for the balanced Sylvaner Eisacktal from Trentino-Alto Adige are grapes from the grape variety Silvaner. At the time of optimal ripeness, the grapes for Sylvaner Valle Isarco are harvested exclusively by hand without the use of punishing and hardly selective machines. After the harvest, the grapes reach the winery by the fastest route. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the completion of fermentation, the Sylvaner Eisacktal can harmonize further for 7 months on the fine lees.
