Vinification of the Syrah Salento from Sampietrana
The basis for the balanced Syrah Salento from Apulia are grapes from the Syrah grape variety. The grapes for the Syrah Salento are harvested exclusively by hand at optimum ripeness, without the help of coarse and less selective machines. After the harvest, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in large wooden vats at controlled temperatures. The fermentation is followed by 6 months of ageing in oak barrels.
