The Malvasia Tenuta Capofaro Salina IGT from Tasca d'Almerita is made from grapes grown in the vineyards of the Capofaro winery, in the heart of the small Aeolian island of Salina.
The Malvasia Tenuta Capofaro has an intense golden hue in the glass, with bright reflections. The bouquet serves up the whole variety of aromas of the island and enchants with scents ranging from apricot to peach, creamy, sweet aromas of fresh cake with candied orange peel and candied lemon peel, nuances of raisins, spicy and floral notes of pepper, citron and jasmine.
On the palate, this juicy Malvasia is energetic and lively, very well balanced between the acidity typical of the variety and the sweetness of a passito, pleasantly fresh, full-bodied and with a beautiful minerality, characterized by the volcanic soils on which the grapes grow. The finish is long-lasting and delights with aromatic and citric nuances.
Vinification of the Tenuta Capofaro Malvasia Salina IGT from Tasca d'Almerita
The large vine leaves protect the grapes like sun hats from the scorching sun that burns from the sky on the island and at the Capofaro winery, thus preserving the fineness of the Malvasia grapes. This ensures that the typical varietal aroma is fully preserved. This Passito is made from 100% Malvasia grapes from the Capofaro vineyards, which are selectively harvested by hand. After the harvest, the grapes "rest" in a shady and dry place on straw mats until they have reached the right degree of dryness and are pressed. Fermentation takes place at a controlled temperature over a period of 25 days; there is no malolactic fermentation. The wine is then aged for 6 months in stainless steel tanks and then matures for a further 4 months in the bottle.
