    The High Trellis Cabernet Sauvignon 2016 - d'Arenberg

    The High Trellis Cabernet Sauvignon from d'Arenberg from McLaren Vale in South Australia is a pure, seductive and rich red wine.

    The glass covers this wine a dark red color with ruby to violet shades. The fresh and lively bouquet is full of plums and blackcurrants, paired with minty notes and fragrant violets. The barrel ageing provides a hint of cedar and lends complexity, combined with the characteristic emotional down-to-earth character of the d'Arenberg red wines. The structured, supple, fresh and balanced palate, with a core of violet fruits (cassis and plums), liquorice, graphite and minerals, wraps itself in filigree, chalky tannins.

    Vinification of Cabernet The High Trellis d'Arenberg

    After the careful harvest of the Cabernet Sauvignon grapes, the grapes are immediately taken to the d'Arenberg cellar. There, the grapes are gently crushed in small batches and then fed into open fermenters. Two thirds of the grapes are stomped with their feet during fermentation. This red wine is then pressed in a basket and placed in French oak barriques to complete the fermentation. In the barrel, this wine continues to ferment on the yeast.

    This wine is bottled without fining and filtration.

    The High Trellis vineyards, established in the late 19th century, received their name because they were raised above knee height. In the 1890s, these vines were among the first to be raised in the same way.
