The Untertürkheimer Gips Riesling of the Aldinger winery comes from the monopoly site Gips in Untertürkheim, which is solely owned by the winery. In the glass, the site wine comes with a light yellow color. It caresses the nose with ripe fruit notes of apple, peach and citrus notes of fresh lime zest. Herbal nuances reminiscent of mint and lemon balm, together with a fine hint of flint, round out the bouquet of this top Riesling from Württemberg.
On the palate, Aldingers Untertürkheimer Gips Riesling first shows a classic Riesling typicity, which is complemented on the one hand by the aromas of the nose, on the other hand by fine minerality as well as a salty touch. The grippy fruit acid balances excellently with a very fine residual sweetness of just over 4 grams per liter. There is again plenty of mineral grip on the long finish.
Vinification of the Aldinger Untertürkheimer Gips Riesling
The site Riesling from the Untertürkheimer Gips is produced 40% in the piece barrel, 60% in stainless steel tanks. The fermentation is spontaneous. This is followed by a yeast storage until March of the following year. The grapes grow on the best gypsum-Keuper soil, which provides an expressive minerality.
