Vinification of the Valpolicella from Allegrini

The balanced Valpolicella from Italy is a cuvée made from the Corvina and Rondinella grape varieties. After the grape harvest, the grapes are transported to the winery as quickly as possible. Here they are selected and carefully broken up. This is followed by fermentation in stainless steel tanks at controlled temperatures. At the end of fermentation, the Valpolicella can continue to harmonize on the fine lees for a few months. Ageing in wooden barrels is followed by a long period of maturation in the bottle, which makes this white wine even more complex.

This Italian wine is best enjoyed at a temperature of 15 - 18°C. It goes perfectly with duck breast with sugar snap peas, stuffed peppers or boeuf bourguignon.
