This red wine from Veneto is powerful and intense on the palate with soft tannins. The impressive finish is characterized by aromas of precious wood and fruit.
Vinification for the Valpolicella Ripasso Campo dei Ciliegi DOC from Latium Morini
This cuvée is made from the Corvina, Rondinella and Croatina grape varieties. The vines are rooted in limestone-clay soils in the Mezzane di Sotto region.
After manual harvesting, the grapes are destemmed and pressed, followed by cold maceration for 48-72 hours. Fermentation lasts around 12-15 days, followed by a short secondary fermentation on the Amarone marc.
This Valpolicella Ripasso is aged for 12-15 months in 250-litre French and American oak barrels. The wine is then refined for a further 6 months in the bottle.
