Poured into a red wine glass, this red wine from Italy reveals wonderfully complex aromas of blackcurrant, blueberry, blackberry and mulberry, rounded off with gingerbread spice, oriental spices and dark chocolate, which are contributed by the ageing in wooden barrels.
On the palate, the Valpolicella Ripasso Classico Superiore from Bolla starts off pleasantly aromatic, fruity and balanced. On the finish, this storable red wine from the Veneto wine-growing region impresses with its exceptional length. Once again, there are hints of mulberry and blueberry. In the finish, mineral notes from the clay and limestone-dominated soils are added.
Vinification of the Valpolicella Ripasso Classico Superiore from Bolla
The starting point for the first-class and wonderfully powerful Valpolicella Ripasso Classico Superiore cuvée from Bolla is Corvina, Corvinone and Rondinella grapes. The grapes grow under optimal conditions in Veneto. Here, the vines dig their roots deep into soils of clay and limestone. When perfect physiological ripeness is ensured, the grapes for the Valpolicella Ripasso Classico Superiore are harvested exclusively by hand without the help of coarse and less selective machines. After manual harvesting, the grapes are transported to the winery as quickly as possible. Here they are selected and carefully broken up. This is followed by fermentation in small oak barrels at controlled temperatures. Fermentation is followed by maturation on the fine lees for several months before the wine is finally drawn off.
